Any true steak lover will tell you that the skirt is the best of both worlds: the eye of the rib is pleasantly marbled and mouthwateringly tender, and the luscious crescent wrapped around the outside edge is one of the most delicious morsels on the steer. We graze our Black Angus cattle on pasture in the mid-Atlantic region of the United States, where they enjoy a carefully balanced diet of grass, forage crops and hay that never includes hormones or growth promoting antibiotics, to bring you truly delicious, flavorful pastured kosher beef. We take care every step of the way to make sure the meat is raised well, processed humanely, expertly butchered, carefully packaged, delivered seamlessly and prepared with confidence in your kitchen. It is our great pleasure to bring these delicious meats to your table.
Rib-eyes are one of our most popular steaks. Season them coarsely ground black pepper or garlic and herbs, or a steak rub of your choice. Serve one per person for a hearty meal, or serve sliced.
BASIC COOKING TECHNIQUE:
Sear over high heat on a grill, then finish using indirect heat. May also be broiled or pan-seared. Tent with foil and let rest for 10 minutes before slicing and serving.
